I wasn't a huge PC gamer back in the day, but did spend many hours playing Imperialism. It was kind of a Civilization-lite game, where you started off controlling one of the great European powers around 1800 and took them through WWII (if remember correctly). I had this obsession with using the Ottoman Empire (which was the worst empire as far as resources and technology were concerned) and trying to conquer Europe. I probably put a 100 hours or more into that game, not because it was on the level of Civ or Masters of Orion, but simply because it was accessible enough and fast enough to play multiple campaigns in a weekend.

I use to play MS-DOS games on floppy disks growing up. Fairy Godmother, Solomon Key, Lode Runner, Pit-Fall, One Must Fall. One of my favorites later on would be StarCraft and the expansion pack. I used to play LAN with my friends once a week. I tried to get them into WarCraft III at the time, but they were not fans of the settings/graphic style.

When I was really young, I used to play a DOS game called The Adventures of Captain Comic. From what I can remember, it was a basic exploratory platformer. Nothing too special, but I was a kid, and at the time, I loved it. After a while, I started to experiment with DOS itself, eventually learning how to copy floppy disks. I then ended up copying Captain Comic to all the available floppy discs, including the DOS boot disks. So the computer couldn't start up anymore,and my parents were forced to finally upgrade. Needless to say, they weren't happy with me.
I haven't played Captain Comic in over 20 years, so I don't know how well it held up. I imagine it's pretty mediocre, though.

I didn't have a PC until 1998, so I missed out on most of the DOS days. If I had to choose one though, I'd probably go with Wolfenstein 3D. My neighbor had it, so I was able to play it quite a bit and it was amazing at the time. Once I finally had a PC, I purchased a ton of games to try and catch up. It's tough to pick a favorite from those, so here are the ones that stand out:
Myth: The Fallen Lords Phantasmagoria (yes, I enjoyed this game haha!) Carmageddon Age of Empires Duke Nukem 3D Quake II Blade Runner Diablo

I don't remember a lot of the games I played on PC back in those days. I guess a lot of them didn't stick with me. The ones I remember enjoying a lot were Doom 2, Star Wars Dark Forces, Sim City and Sim City 2000, and Star Wars TIE Fighter.
